According to the current, 2020 edition of NFPA 25, the Standard for the Inspection, Testing, and Maintenance of Water-Based Fire Protection Systems, the maximum ceiling temperature per sprinkler rating are as shown in Table 1.

Sprinklers exposed to temperatures above the allowable maximum ceiling temperature can experience performance issues. For this reason, it is crucial to ensure sprinklers are never exposed to temperatures above the stated maximum ceiling temperatures. This includes sprinklers yet to be installed. Section 5.4.1.5.2 of NFPA 25 specifically states the stock of spare sprinklers shall be kept in a cabinet in an environment where the temperatures will not exceed the maximum ceiling temperature.
